My name is Catie and welcome to Meals Done Light! I created this blog in order to share recipes that are healthy without sacrificing flavor. I graduated from the University of Missouri in 2015 with a degree in clinical dietetics and became a registered dietitian soon after. I now work in a 600+ bed hospital in Kansas City on a cardiac/family medicine floor as well as a floor that has patients who are recovering from cardiothoracic surgery.
I enjoy teaching my patients about healthy cooking techniques to help them manage conditions such as diabetes, heart failure, high blood pressure, etc. I love showing people how they can still fit most of their favorite foods into their recommended diet restrictions. I love my “clinical world”, as they say, but my goal of this blog is to reach many more people who may not necessarily be sick, but who desired to eat healthy as a way to maintain life-long health.

Luckily I have a pretty good taste tester at home, my fiance, Lars. I can always trust his opinion, but in our two years of living together he has only disliked one dinner I made…success! Although, he’s easy to please and he’s my #1 fan.
As of now, our only “baby” is our pup, Kaci, in the picture below. We someday hope to have a family so my goal is for a majority of my recipes to be simple, quick, and family-friendly.
My goal of this blog is to share recipes that taste great and are also healthy. I plan to share ingredients that I use and the health benefits behind them. But as you will find, I will hardly ever use the word “diet” as to me it is known as another “four letter word”. I feel that healthy eating needs to be looked at as something that is realistic and enjoyable. As a dietitian, I often hear of diets that eliminate entire food groups which is not what I teach my patients and I will not use in this blog. You will find that my recipes will include a wide variety of foods, cooking techniques, and flavors and I will always preach a dietitians favorite word, “moderation”.
