Buffalo Chicken Meatballs

I love anything buffalo, and healthy buffalo? I’m all for it! I made this recipe after my mom shared a recipe for buffalo chicken burgers with me. Don’t get me wrong, I like burgers (and you could even modify this recipe to make burgers if you wanted), but I love the simplicity of meatballs. I also love how quickly they cook, usually 15-20 minutes.

I used my OXO Good Grips Box Grater (affiliate link) to grate the carrots and celery which made the process super easy. Then just combine the ingredients together, form into 2 inch size meatballs, and bake for about 20 minutes and DONE.

I always get questions from friends and family about what good side options are for different dishes. I served this with a spinach salad with shredded carrots and Bolthouse Farms Classic Ranch Dressing and Birds Eye Steamfresh rice blends (highly recommend for a quick side dish with some added veggies).

Another easy way to serve this would be on whole wheat buns to make a combination of a buffalo chicken sandwich AND a meatball sandwich. This way is definitely a winner in my house.

  1. Preheat oven to 400 F. Line a baking dish with foil and spray with non-stick cooking spray. In a medium size mixing bowl, combine all ingredients until distributed evenly. Using your hands, form into ~2 inch size meatballs and place on baking sheet. Bake in oven for 20 minutes.
