Buffalo Chicken Roll Ups

Who would of thought you could make things in egg roll wrappers that were not egg rolls? We LOVE Emily Bites Pizza Log recipe using these. We seriously do this once a week for a quick weekend lunch. I have been brainstorming what else could be wrapped in egg roll wrappers and Lars helped me think of this one. I have made this buffalo chicken in the Crock Pot before and we just had it on buns or celery sticks.

This recipe makes 8 servings, but you can easily duplicate this recipe to make an amount large enough for an appetizer at a party that your guests will love!

I used Bolthouse Farms classic ranch for dipping these in. You can also use any type of buffalo sauce you like best. Lars likes spicy and I prefer more mild so we met in the middle for our spice level on this one, I just had to keep the celery sticks handy!

Egg roll wrappers are just flattened wheat dough sheets. They can be found in the refrigerated area of the produce section at most grocery stores. They are larger than wonton wrappers and they are in the shape of a square.

  1. Preheat oven to 425 F. Place parchment paper on baking sheet, spray with non-stick cooking spray, and set aside.
  2. Transfer chicken into separate bowl and add plain Greek yogurt and buffalo sauce and mix until evenly distributed.
  3. Gather your egg roll wrappers, cream cheese, and chicken. Place a small bowel of water near your workstation.
  4. Place egg roll wrapper on a large, flat surface with corner facing you (will look like the shape of a diamond). Spread ~1 teaspoon of reduced-fat cream cheese horizontally across the center (~4 inches long). Scoop 1/4 cup of buffalo chicken mix and spread evenly over cream cheese. Fold the bottom corner up and over the ingredients and roll up. Fold the side corners over the ingredients while continuing to roll. Dip your finger in bowl of water and wet the edges of the top corner. Continue to roll and fold the wet top corner over the ingredients to secure the wrapper. Place each roll up onto baking sheet. Repeat until all 8 wrappers are prepared.
  5. Brush whisked egg or egg whites over wrappers with basting brush. Bake in oven for 12-14 minutes, flip halfway through, and remove when golden brown.
