Honey Sriracha Chicken Meatballs

I seem to be on a meatball kick recently! But I love them because they are generally a quick recipe to make since they don’t take more than 5-10 minutes to prepare and 15 minutes to cook in the oven. Pair with some type of starch and a non-starchy vegetable, or just have in a salad. They’re even easy to freeze and reheat in the oven again later if you have leftovers! Although leftovers are rare in my house as I make just enough for dinner and for my fiance and I to take to work the next day for lunch.

I love this recipe as I was able to whip it up in a little over 30 minutes on a weeknight! I made it easy by pairing it with steam in a bag broccoli and Birds Eye Steamfresh frozen rice blends! I love these rice blends because it takes less than 5 minutes in the microwave and they even have some extra veggies thrown in there! I added just a bit of soy sauce to the rice and it paired perfectly with these meatballs!

Instructions
  1. Preheat oven to 425 F. Line baking sheet with foil and spray with non-stick cooking spray.
  2. Combine all meatball ingredients in medium size mixing bowl. Using your hands, form into 22 1 1/2 inch size meatballs. Place in oven in cook for 15 minutes.
  3. While meatballs are cooking, combine all sauce ingredients in a sauce pan over medium high heat. Allow to come to a boil. Once boiling, reduce heat so the sauce simmers for 8-10 minutes. Remove from heat and allow to cool.
  4. Once meatballs are cooked, allow to cool for 5-10 minutes. Place meatballs in medium mixing bowl and pour sauce over the top. Using tongs, toss meatballs until sauce is distributed evenly. Sprinkle with sesame seeds, if desired.
