Parmesan Chicken Nuggets

Try out this recipe for a quick weeknight meal that your family will love (especially kids!). Ready in 30 minutes or less, doesn’t get better than that! This is a much healthier alternative to frozen chicken nuggets, and in my opinion, I think they taste much better! Just cooking for 1 or 2 people? These are easy to freeze and reheat in your oven just like you would with frozen chicken nuggets.

We paired this with a caprese salad with mixed greens, fresh mozzarella, cherry tomatoes, and balsamic vinaigrette. It would also be good served over pasta with a side veggie like steamed broccoli!

Dip the chicken pieces into the flour, egg, and then breadcrumb + Parmesan mixture and spray with non-stick cooking spray, or even better, I sprayed with olive oil in my Misto (affiliate link).

  1. Preheat oven to 425 F. Cover a baking pan with foil and spray with non-stick cooking spray.
  2. Trim any visible fat on chicken breast. Then cut into 1-2 inch size pieces.
  3. Place 3 small mixing bowls in front of you. Fill the first bowl with flour, second with eggs or egg whites, and third with mixture of Italian breadcrumbs and grated Parmesan cheese.
  4. Dip pieces of chicken in flour and coat on boat sides. Gently shake off any excess. Dip in egg mixture and let the extra drip off. Transfer to breadcrumb and cheese mixture and coat evenly. Place on baking sheet. Repeat until remaining ingredients are used. Spray with non-stick cooking spray or olive oil.
  5. Bake in oven for 15 minutes.
  6. Once cooked, serve with heated marinara sauce.
