Parmesan Chicken Nuggets
Try out this recipe for a quick weeknight meal that your family will love (especially kids!). Ready in 30 minutes or less, doesn’t get better than that! This is a much healthier alternative to frozen chicken nuggets, and in my opinion, I think they taste much better! Just cooking for 1 or 2 people? These are easy to freeze and reheat in your oven just like you would with frozen chicken nuggets.
We paired this with a caprese salad with mixed greens, fresh mozzarella, cherry tomatoes, and balsamic vinaigrette. It would also be good served over pasta with a side veggie like steamed broccoli!
Dip the chicken pieces into the flour, egg, and then breadcrumb + Parmesan mixture and spray with non-stick cooking spray, or even better, I sprayed with olive oil in my Misto (affiliate link).
