Preheat oven to 425 F. Cover a baking pan with foil and spray with non-stick cooking spray.
Trim any visible fat on chicken breast. Then cut into 1-2 inch size pieces.
Place 3 small mixing bowls in front of you. Fill the first bowl with flour, second with eggs or egg whites, and third with mixture of Italian breadcrumbs and grated Parmesan cheese.
Dip pieces of chicken in flour and coat on boat sides. Gently shake off any excess. Dip in egg mixture and let the extra drip off. Transfer to breadcrumb and cheese mixture and coat evenly. Place on baking sheet. Repeat until remaining ingredients are used. Spray with non-stick cooking spray or olive oil.
