Sausage & Bell Pepper Pasta

I wish I could call this pot a “one pot meal”, but unfortunately it uses 2 dishes. However, this still makes for a very fast clean-up which makes my fiance happy (yes I am lucky enough to have a man help me with the dishes!). But on a busy work night this is a good “go-to” meal that shouldn’t take you more than 30 minutes to prepare.

Now I chose to use Al Fresco chicken sausage in this recipe and I chose the Sweet Italian Style. The Sundried Tomato, Roasted Garlic, or Roasted Pepper Asiago varieties would also be yummy in this dish! I went with Al Fresco due to the lower saturated fat content they have compared with pork sausage.

  1. In a large skillet, heat olive oil in skillet and add garlic and sausage. Cook on medium heat for about 3 minutes.
  2. Meanwhile, bring water to a boil in large pot. Once boiling, add penne and cook until al dente.
  3. Add bell peppers and onion to sausage and garlic, cook on low-medium heat until vegetables are tender, about 10-15 minutes.
  4. Once pasta is cooked, drain and return to pot. Add heart healthy pasta sauce and Italian seasoning. Once vegetables are tender, transfer sausage and vegetable mixture to the pot with pasta and combine.
  5. Portion out onto plate, and top with shredded Parmesan cheese if desired.
