Sheet Pan Shrimp Tacos
Taco Tuesday anyone? This is always a go-to in our house. I love this dish because it has a good amount of spice from the jalapeno and taco seasoning, but is cut by the sweetness of the pineapple! You can prepare this meal in probably 10 minutes or less and it only takes 15 minutes to cook.

Take the time to chop the red onion, jalapeno, and pineapple so you are ready to just throw together the shrimp, beans, lime juice, and spices the night you plan to have this for dinner. Better yet, have all ingredients combined in a bowl, cover, and keep in fridge until the night you plan to make this. That will have dinner on the table in ~20 minutes (just allowing time for the oven to preheat).
My goal is to share easy, healthy recipes that are easy to prepare on those busy work nights because, well, I get it! Working full time and eating healthy can be tough! Let alone having a little one (kid…or pet) to also take care of when you get home. This meal will sure be a crowd-pleaser.
